Bonito flakes, known as katsuobushi in Japanese cuisine, are made from dried, smoked and shaved fish. The flakes are thinly shredded into strings for toppings such as Okonomiyaki, Miso soup, Udon, etc.
Yamaki (established in 1917 in Japan) was the first company to produce Bonito flakes and powder in the U.S.
